Ingredients

    1 1/2 lb. ground elk meat
    3/4 c. chopped onion
    1/2 c. chopped green pepper
    salt & pepper to taste
    2 cans of pinto beans (or chili beans)
    1 can light red kidney beans
    2 cans diced tomatoes
    1 T. taco seasoning
    1/2 T. chili powder
    1 T. dried cilantro
    1 t. cumin

Tips

The longer it simmers the better it tastes. Excellent left over also. Beef may be substituted for the Elk, just adjust calories accordingly.


Directions

Cook the hamburger with the diced onions and diced green pepper. Once it is done, add the tomatoes, pinto beans (prefer chili beans), and kidney beans. Also add desired spices. (I used 1 T. taco seasoning, 1/2 T. chili powder, 1 T. dried cilantro, 1 t. cumin and salt & pepper). Bring to a starting boil then reduce heat, cover and simmer for an hour or more, stirring occasionally.
