Ingredients

    4 boneless skinless chicken breasts (4 oz each)
    1 heaping tbsp chopped raw onion
    2 apples peeled, cored and small diced
    1 tsp chopped fresh sage
    salt and fresh ground pepper
    1/4 cup Craisins
    2 tbsp Hormel Real Bacon Bits
    4 oz Brie Cheese, sliced
    2 tbsp all purpose flour
    2 tbsp unsalted butter

Directions

Preheat oven to 450F.

For apples: Heat 1 tbsp of butter in a skillet over medium heat. Add onions and cook for 30 seconds until fragrant. Add diced applies, craisins and bacon bits, cooking until golden and tender (5-7 minutes). Mix in chopped fresh sage and saute a minute longer. Remove from heat and let cool.

For Chicken: At the largest end of each chicken breast, make a deep horizontal cut (pocket). Stuff each breast with a slice of brie and then apple mixture (May need a toothpick to hold closed). Dust chicken on both sides with flour and season with a little salt and pepper. In an ovenproof skillet, heat 1 tbsp of butter on medium heat. When hot, brown chicken on both sides (be careful turning so filling doesn't fall out). Once chicken is browned place on sheet pan in a preheated oven and let them cook until done; about 15-20 minutes or an internal temperature of 160-165F.
