    5.25 cups bread flour
    1 cup cake flour
    1/4 cup wheat germ
    2.5 tsp salt
    1.25 cups warm water
    1 cup cold water


Proof yeast in warm water. Mix flour, wheat germ & salt. Add proofed yeast to flour mix. Once mixed add cold water. let rise for 1-1 1/2 hour. Punch down dough & let rise again about 1 hour. After second rise prepare dough for bauguette pan. Let dough rise for about 1 hour. Bake at 425 for 25-30 minutes.
