Number of Servings: 6


    600 grams zucchini with skin cut into bite size chunks (remove seeds and soft center if using large zucchini)
    60 gm onion, chunks
    200 gm red pepper, raw, bite size chunks (1 large)
    1 large can whole tomatoes, chunked 735 gms w/juice
    1 can black beans 254 gms, drained and rinsed
    1 Tbsp EVOO (olive oil)
    2 Tbsp garlic powder or fresh garlic to taste
    2 tsp Italian seasoning
    Fresh Basil (3 Tbsp) Add after all above is tender
    or 1 tsp dried basil added while simmering

    Makes 6 cups (Six 1 cup servings/approx 285 gm/serving)


May use red or green pepper or mix the two. Great way to use up summer squash


Chop all ingredients into bite size pieces. Add EVOO to large pan and heat, add onion and cook 2-3 mins over med heat, stirring. Add all other ingredients (except fresh basil) to pan. Simmer on low until slightly thickened and tender. Chop fresh basil and stir in just before serving or add 1 tsp dried basil while simmering.
