    8 small mushroom, chopped
    1 stalk celery, chopped
    2 Tbls. chopped onion
    2 Tbls. butter
    1/2 cup chicken broth
    3/4 cup heavy cream
    Salt & Pepper, to taste


In a medium skillet, saute the mushrooms, celery, and onions in the butter until soft. Add broth and cook on medium high heat until reduced by half. Stir in cream; bring to a boil and cook until reduced slightly, stirring frequently. Season to taste. makes a bout 1 cup. (11.5 carbs)
