    1 Tbsp. olive oil
    1 medium brown onion, finely chopped
    1 medium carrot, peeled, finely chopped
    1 stick celery, trimmed, finely chopped
    2 garlic cloves, crushed
    500g beef mince
    1/3 cup/100g tomato paste
    2 x 400g cans diced tomatoes
    1 tsp. dried oregano
    Large pinch ground nutmeg
    2 tsp. brown sugar
    1 beef stock cube
    2 bay leaves
    Grated or flaked parmesan cheese, to serve (optional)


It's great spooned over cooked spaghetti or fusilli or any other pasta.


1. Heat oil in a large saucepan over medium-high heat. Cook onions, carrots, celery and garlic, stirring for 5 minutes or until softened. Add mince. Cook, breaking up with a wooden spoon, for 5-8 minutes or until browned.

2. Add paste, tomatoes, oregano, nutmeg, sugar, stock cube, bay leaves and 1/2 cup cold water. Bring to boil. Reduce heat to low. Simmer, uncovered, for 25-30 minutes or until thick. Season with salt and pepper.
