Introduction

I learned this recipe from a friend's mother when I started baking back in 1970 (I was in the 5th grade in 1970). The coconut adds a flavor to the banana bread which can't be beat.

It may seem strange to call "bread" a vegan item... but most breads call for shortening (usually butter) and eggs. By substituting applesauce for the eggs and some non-dairy buttery spread, I removed all animal products.

Ingredients

    1/2 cup vegan shortening
    1 cup granulated sugar
    1/2 cup unsweetened applesauce
    1 cup mashed banana (about 2 medium)
    1 tsp lemon juice
    3 tsp baking powder (or 1 tbsp)
    1/2 cup whole grain flour
    1-1/2 cup enriched wheat flour
    1 cup shredded coconut

Tips

Bananas should be very brown, with a trace of yellow, for this bread. Yellow bananas work but the bread won't be as good. Black bananas are nearly worthless; toss them in your compost heap.

The bread may take a bit longer than 1-1/4 hours depending on your oven. Check doneness as you would for any bread (browned, clean knife blade in the center).

If you can't eat granulated sugar, or don't want to, substitute raw sugar, agave nectar, or some similar thing.

I've found unsweetened applesauce an excellent substitute for eggs (1/4 cup applesauce for oen large egg). For added flavor, try cinnamon applesauce or one of the other mixed types (e.g., peach applesauce).


Directions

Cream buttery spread (shortening) and sugar in a mixer.

Mash bananas in a bowl, then add the applesauce and lemon juice; stir until well blended. Add this mixture to the shortening/sugar mix.

Blend flour and baking powder into a small bowl. Add coconut. Slowly add these dry ingredients into the liquid ingredients.

Spray a 1-pound loaf pan with olive oil cooking spray (adds a negligible amount of fat) and flour the pan (keeps the bread from sticking).

Bake at 325 degrees F for 1-1/4 hours. Remove from pan to cooling rack immediately.

Serving Size: Makes about 10, .9-inch thick slices
