Ingredients

1 Large Red Onion
1 Large Green Bell Pepper
1.5 medium tomatoes
Fresh Cilantro
2.5 lbs of uncooked shrimp (yields 30 or so mediums)
Heinz Ketchup
2 Limes
1tbsp and 1tsp Salt
Black pepper
Directions
boil the shrimps with 2-3 shakes of adobo or seasoning salt (adobo preferred) -- about 7 minutes or until done.
while the shrimps are cooking, thinly slice the onions, tomatoes, and green peppers. Place sliced onions in a separate bowl, add the 1tbsp of salt and squeeze one whole lime. Mix it around and let it sit for 10 minutes.
once shrimps are cooked, separate the shrimp and broth, and let both cool separately. to cool broth faster, place it in the freezer.
In the meantime, chop up the cilantro as small as you can. Now you can rinse the onions and combine with tomatoes, green peppers and cilantro into the serving dish.
The shrimp should be cooler now, peel off the shells and remove the tails, and place with the vegetables.
Now add the broth from the freezer and the remaining ingredients (to include squeezing remaining lime), and stir until ketchup is disolved and has a rosy look to it. taste it before serving, you may want to add more salt/pepper to your liking.
now that it's all together, place it in the fridge until you are all ready to eat. You can accompany it with white rice and plantains. Some like it warm, other cold. you pick. =0)
