These brownies comply with the "slow carb" diet and are completely Gluten free.

WARNING: NEED MORE SWEETENER (i like mine less sweet, but most people will expect a sweeter brownie, dusted some with powdered sugar at the end or add more sweetener/sugar to mix)

P.S. I cut these into 20 little brownies but ended up eating about 5 of them for breakfast with some Greek yogurt (the nutrition facts are calculated for 1 brownie of 20...but people will probably eat more than 1)

Ingredients

    *Black beans (GOYA) Frijoles Negros Low Sodium, 1 cup (remove)
    *xylitol, .25 cup (remove)
    Cocoa, dry powder, unsweetened, .5 cup (remove)
    **Flax Seed Meal (ground flax), 2 tbsp (remove)
    Zucchini, 1 cup, sliced (remove)
    Vanilla Extract, 1 tsp (remove)
    Baking Powder, .25 tsp (remove)
    *Instant espresso powder, .25 tsp (remove)

Tips

Add chocolate chips or powdered sugar to increase sweetness if desired. (I personally did not)

These are VERY chocolate-y so if you want less intense brownies, leave out the espresso powder and decrease the cocoa powder.


Directions

Shred Zucchini
mix all ingredients in a blender until smooth
(note: put a small bit in the microwave and taste for sweetness)
Put in a greased, small square glass pyrex

bake at 350 until toothpick comes out clean from the middle (about 25+ minutes)

Serving Size: Makes 16 little brownies... (but people ate about 4)
