    2.5 to 3 pounds of chicken (cut up chicken breasts or meaty pieces such as thighs and drumsticks)
    1 cup unsweetened flaked coconut
    3/4 cup finely crushed plain pork rinds
    1/4 cup butter melted

Remove skin from chicken. In a shallow dish, stir together coconut and pork rinds. Brush chicken with melted butter (I just dipped it in). Sprinkle with salt and pepper. Dip into coconut mixture to coat.

Arrange chicken pieces onto a cookie sheet, so that the pieces aren't touching. Dizzle any remaining butter over the chicken.

Bake in a 375 degree oven for 45 to 55 minutes or until the chicken is tender and no longer pink.

Do not turn pieces while baking.

** Calories estimated are probably MUCH higher than actual. After "breading" all of my chicken pieces, I still had ~a cup of coconut/pork rinds left, so you really aren't consuming all of the ingredients. Pork rinds are pretty high in calories, but low in carbs. Since I'm not tracking calories, I didn't adjust the values.
