Introduction

Ingredients

    6 eggs, beaten
    1 large zucchini, diced
    1-2 cups frozen spinach
    6 oz beef (steak or ground), cooked
    2 slices thick cut bacon, chopped & cooked
    1/4 cup diced red or yellow onion
    1 tsp minced garlic
    salt & pepper

Directions

Cook the meats in a pan.

In a 9x9 baking dish, layer the zucchini, spinach, & onion. Add the meat over the top. Pour in the eggs.
Sprinkle some salt & pepper.

Bake at 400' for 20-25 minutes. Let set 5 minutes before serving.
