    Large onion chopped
    2 garlic cloves mashed
    Tbsp olive oil
    Tsp cumin seeds
    Tsp ground coriander
    Pinch cinnamon
    400g chopped tomatoes
    250g green lentils
    500 ml vegetable stock
    3 carrots
    200g potatoes
    Salt & pepper to taste.


Fry onion, garlic and spices in half of the oil until onions translucent.
Add stock, lentils and tomatoes.
In another pan fry chopped carrot & potato for 5 mins using rest of oil.
Add to stewpot
Bring to boil and simmer for 20 minutes.

Serving Size: Serves two and a half
