Ingredients

    75 g plain wholemeal flour
    75 g plain white flour
    10 ml baking powder
    pinch of salt
    5 ml mixed spice
    40 g soft light brown sugar
    50 g low fat margarine
    1 egg, beaten
    150 ml semi-skimmed milk
    grated rind of one orange
    1 ripe banana
    20 g dry porridge oats
    20 g chopped hazelnuts

Directions

1. Preheat oven to 200 F. Line a muffin tin with 12 large paper cake cases. Sift together both flours, the baking powder, salt and mixed spice into a bowl, then tip the bran remaining in the sieve into thee bowl. Stir in the sugar. 2. Melt the margarine and pour it into a mixing bowl. Cool slightly, then beat in the egg, milk and grated rind. 3. Gently fold in the dry ingredients. Mash the banana with a fork, then stir it gently into the mixture, being careful not to over mix. 4. Spoon the mixture into the paper cases. Combine the oats and the hazelnuts and sprinkle a little of the mixture over each muffin. 5. Bake for 20 minutes until the muffins are well risen and golden. Transfer to a wire rack to cool.
