A super fast and easy one-pot meal. A super fast and easy one-pot meal.
Number of Servings: 6


    16 oz fettuccine pasta
    1 can stewed Italian tomatoes
    1 large onion, sliced in strips
    5 cloves garlic, minced
    1/2 tsp red pepper flakes
    2 tsp dried oregano leaves
    2 large sprigs basil, chopped
    6 cups chicken stock
    1/2 cup red wine
    2 tbsp extra virgin olive oil


Place pasta, tomatoes, onion, garlic and basil in a large stockpot. Pour in vegetable broth. Sprinkle the pepper flakes and oregano on top and drizzle oil.

Cover pot and bring to a boil, pushing pasta into liquid as soon as possible. Reduce to a low simmer and keep covered and cook for 10-20 minutes, stirring every few minutes. Cook until almost all liquid has evaporated--approximately an inch in the bottom of the pot.

Season to taste with salt and pepper, stirring to mix in.
Garnish with parmesan cheese (not included in calorie count). Can be served with chicken as well (also not included)
