Introduction

This is one of those "Gosh, we're broke. What can we make out of what we've got that the kids will actually eat?" Voila! Serve with fancy sauce/Russian dressing, and it's a meal.
Mind you, each serving probably contains about 1 tbsp of oil, but you will need more like 4 cups total in order to deep fry. You can bake them instead if you want to, and eliminate the oil altogether. I imagine they'd be almost as tasty. They're really filling, either way.

Ingredients

    5 cups cooked black-eyed peas without salt
    1 cup liquid egg whites
    1/2 cup raw wheat germ
    1 cup unbleached flour
    4 tsp baking powder
    Season to taste with onion powder, garlic powder, salt, and black pepper

    4 cups oil for frying (entered in nutrition information as an estimated 1 tbsp oil per serving, though since it doesn't take long to fry, I imagine it could be less. I prefer to over-estimate.)

Directions

Mash up black-eyed peas with potato masher. Add in egg whites, flour, wheat germ, seasonings, and blend together well with an electric mixer. Heat oil to 350 degrees F. Fry in small batches by the heaping tablespoon, until bronzy in color. They will fluff up. Drain on a wire rack set on paper towel.

Serving Size: Makes about 10 four or piece servings, depending on size.
