Ingredients


    1/4 c. Yogurt Plain Greek Yogurt
    3 TB chopped Cilantro
    1 TB Lime Juice 1 TB olive oil
    2 oz Shrimp, cooked
    1/4 c. Onions, chopped finely
    1/4 C. Roasted red peppers
    1 clove minced Garlic
    2 TB Mild Salsa
    1/2 chopped red or green Cabbage
    2 8 or 9" gluten free tortillas (I use Rudi's)

Directions

Mix the Greek yogurt and cilantro with the lime juice in a small bowl. Chill until ready to serve.
Saute the shrimp in 1/2 of the olive oil. Remove from pan and set aside. Saute the onions, red peppers and garlic until the onions are transparent. add shrimp and stir. Add the salsa, and cook till heated through.
Put 1/2 of the shrimp mixture in each of the tortilla shells, top with cabbage and yogurt mix. Serve
