    1# ground pork
    1 can mild rotel
    1 pkt taco season
    1 pkg low carb tortillas
    1/2 can green chile enchilada sauce
    1 c shredded 2% mexican cheese


*Preheat oven to 350. Spray 9x13 baking dish with cooking spray.*

1. Brown pork. Break up with spatula as it cooks.
2. Add rotel and taco seasoning. Cook for 2-3 minutes to distribute flavor.
3. Drain excess grease.
4. Fill tortillas with approx. 1/2 cup pork mixture--adjust amount as desired. Roll and place in baking dish.
5. Continue until all meat mixture is gone.
6. Pour enchilada sauce over top center of all enchiladas.
7. Bake 20 or so minutes or until any exposed tortilla begins to crisp.
8. Sprinkle top of enchiladas with cheese. Bake an additional 5 or so minutes until melted.
