    One Pie Crust
    5 Eggs
    2 Cups Shredded Colby Cheese
    1 Package spinach, frozen
    1/2 Cup Canned Mushroom Pieces
    1 small onion (about 3/4 cup)


Thaw and drain spinach. Squeeze out extra water. Drain canned mushrooms. Mix all ingredients together and pour into pie crust. Bake at 375 for 45 minutes or until top turns slightly golden brown.

You can substitute egg beaters for eggs. I like to keep my chemical intake to a minimum, so I don't mind eggs.
