Ingredients

    4 peppers chopped
    (green red, yellow & orange)
    1 medium purple onion
    1 can black beans - drained
    1 can black eyed peas - drained
    1 can corn - drained
    Delmonte summer crisp
    3/4 cup cider vinegar
    1/8 cup sugar
    1/8 cup splenda
    1/2 cup olive oil

Directions

Add all ingredients into a large bowl and mix.

Serve over spring greens for a light sweet salad.
