Introduction

My spin on some other Spinach recipes I have seen. My spin on some other Spinach recipes I have seen.
Number of Servings: 1

Ingredients

    2c fresh (bagged) Spinach
    1/2c fresh sliced mushrooms
    1/4 c thin sliced radishes
    2tsp chopped garlic
    2tbsp Extra Virgin Olive oil
    1can tuna in water (drained)
    1tbsp Mayo

Tips

We did this for dinner, could easily be downsized for a smaller side dish. always looking for feedback to make more nutritious.


Directions

Make a bed of Spinach, mix Tuna and mayo and place in center, surround with radishes, quickly saute mushrooms and garlic in olive oil, pour mushroom mixture on top around the tuna.
