The sweet and spicy mix is great! This goes good with some mexican rice and black beans. The sweet and spicy mix is great! This goes good with some mexican rice and black beans.
Number of Servings: 6


    6 Bonless, skinless chicken thighs
    1 1/2 cup canned peaches, chopped
    1 Tbsp Olive oil
    1/2 cup chopped bell pepper
    1/2 cup salsa
    1/4 orange juice
    salt and pepper to taste


Season chicken with salt and pepper to taste. In a large skillet heat oil over medium heat. Add chicken and saute for 9 to 10 minutes, turning once, until chicken is no longer pink in center. Remove chicken from skillet.
Add bell pepper to skillet, reduce heat and saute for 2 minutes, stirring, until pepper is crisp and tender. Add the salsa and orange juice to the skillet and bring all to a boil, scraping up browned bits from the bottom of the skillet.
Return chicken to skillet. Simmer 15 min. Add peaches. Simmer 5 more min. and serve.

Makes 6 servings.
