Quick and easy, and very filling :) Quick and easy, and very filling :)
Number of Servings: 5


    3 cups baby spinach
    1.5 cups fresh cut mushroom
    1 raw onion cut into small pieces
    1 tbsp canola oil (or anything you have on hand)
    Half a jar of prego spicy sausage tomato sauce (or whichever you prefer)
    1.25 cup cooked rice
    Sirachi sauce (adds heat, so add at discretion, or add a chili pepper)
    5 tsp sugar (or less if preferred)


Feel free to add any other vegetables you want to the dish. The sauce goes great with bell peppers and cauliflower too :)


1) Start by putting the onion in the oil to saute it.
2) After a few minutes add the sauce.
3) Then once the sauce is heated add the sirachi and sugar. Stir and taste.
4) Add baby spinach and stir until sauce coats it evenly.
5) Cook mushrooms in separate pan for a few minutes to allow moisture to be removed from the mushrooms, once mushrooms are tender add this to spinach and red sauce. Let the mixture cook on medium to low heat until spinach is completely wilted. (I do it for about 10-15mins)
6) Finally add the rice and stir, allow the rice to become coated and heated. (about 5mins)
7) Turn off stove and allow it to sit for a few minutes before serving. ENJOY!

Serving Size: serves 5 people as a side dish or 2-3 as a hearty main dish :)
