    Low Sodium Soy Sauce
    Egg Beaters


In a sauce pan, heat oil on low heat. Chop entire head of cauliflower in a food processor until the cauliflower is grain-like. Chop onion in the food processor the same way. Chop scallion. Put the cauliflower, scallion and onion in the sauce pan and cover. Cook at med. heat for about 5 minutes or until soft. The pour soy sauce and mix. Then cover with the egg beaters. Cover the sauce pan. Let egg cook about 5 minutes. Uncover and mix well. Then serve.
