    1 cup part skim ricotta
    1 cup shredded part skim mozzarella
    1/8-1/4 cup egg substitute
    4 T grated parmesan cheese or pecorino romano
    1 cup canned crushed tomatoes and season with garlic, salt, pepper, and basil
    1 large zucchini


cut zucchinis in half lengthwise and place on paper plate; put in microwave with cover on plate and cook for 5-6 minutes.
while the zucchini are cooking, mix together the ricotta, mozzarella, egg sub, 2 T pecorino romano, some salt and pepper.

add the seasoning to the canned crushed tomatoes

Add 1/2 cup of crushed tomatoes to bottom of an 8 x 8 inch pan; place the zucchini cut side up (I used a teaspoon to remove some of the zucchini to create a crevice and add the ricotta mixture to each zucchini. Top with remainder of the crushed tomatoes, sprinkle with 2 T of pecorino romano and bake at 350 degrees for 30 minutes; then put under the broiler for about 10 minutes.

Each zucchini half is a serving.
