    1 lb. 93% lean ground turkey
    1 small carrot, grated fine
    1 small onion, minced fine
    3 cloves garlic, minced fine
    1/4 c. seasoned dry bread crumbs
    3 T. plus 1 tsp. olive oil
    3 T. Worcestershire sauce
    3 ounces tomato paste
    1/2 tsp. granulated sugar
    1 tsp. salt
    1/2 tsp. black pepper
    1 1/2 tsp. dried Italian herbs
    2 large baby zucchini


Serve on its own, over pasta or with crusty bread.
I like to top mine with a tablespoon of grated Parmesan cheese, which isn't included in nutritional information.


Mix together ground turkey, all of the grated carrot, half the minced onion, half the minced garlic, all the bread crumbs, 1 T. of the olive oil, 2 T. of the Worcestershire sauce, 1 tsp. of the dried Italian herbs, half the salt, and half the black pepper. Form into 4 patties.

In a nonstick saute pan, get 1 T. of the olive hot and add the patties, browning on both sides. Remove and set aside.

While patties are browning, cut the zucchini in half long-ways and then slice into half-inch slices. Set aside.

After removing patties from pan, add the remaining tablespoon of olive oil. Add the rest of the onion and garlic and all of the zucchini. Season with the rest of the salt, pepper and dried herbs. Saute, stirring constantly, for two or three minutes until zucchini begins to soften a little. Push the zucchini to the outside edges of the pan and add the tomato paste, sugar and the rest of the Worcestershire sauce. Stir the tomato paste mixture for a minute to caramelize it a little, then add 2-3 tomato paste cans of water and stir everything together. Place turkey burger patties on top, spooning some sauce over each one. Simmer gently for about five minutes until sauce has reduced and the burgers are done through.
