Ingredients

For Sauce:
1 cup plain fat free Greek yogurt
1/2 cup diced seedless cucumber
1 tablespoon fresh lemon juice
1 garlic clove, minced
1 tablespoon finely chopped fresh dill
Salt and pepper, to taste
For Meatloaf:
1 lb lean ground turkey
1/2 cup fat free feta cheese, crumbled
1 cup fresh spinach, chopped
2 large egg whites
1/4 cup plain bread crumbs
1 tsp garlic powder
1 tsp oregano
salt & pepper, to taste
Directions
1. Prepare sauce: In a medium bowl, combine Greek yogurt, cucumber, lemon juice, garlic, and dill. Stir until well combined. Taste and season with salt and pepper. Chill for at least 2 hours prior to serving.
2. Preheat oven to 325 degrees.
3. Combine all ingredients in a large bowl; mix well.
4. Place into a lightly greased loaf pan and bake 45 minutes or until cooked thru.
