    1 can (14 oz) of artichoke hearts
    1 pkg (10 oz) of frozen chopped spinach, thawed and drained
    3/4 cup of parmesean cheese
    1/2 cup of reduced fat mozzarella cheese
    3/4 cup of light mayo
    1/2 tsp garlic powder


1. preheat oven to 350
2. drain and finely chop artichoke hearts
3. mix all ingredients and spoon into a 9 inch quiche dish or pie plate (I use a square glass pan)
4. bake 20 minutes
Makes about 6 servings if you just eat it. My husband and I eat it as a meal and put it on a french loaf of bread but it can obviously make many more servings if you use it as a dip for veges or an appetizer.
