You can also use instant rice for a quick side dish. You can also use instant rice for a quick side dish.
Number of Servings: 4


    1 Tbsp Olive Oil
    1/2 cup chopped onions
    1/2 cup chopped bell pepper
    2 cloves garlic, chopped
    1 c long grain rice
    1 c beef broth
    1 can diced tomatoes
    1 can black beans, rinced


Saute onions, bell pepper and garlic in Olive oil until tender. Add rice, and saute until rice is brown. Add beef broth, tomatoes and beans. Bring to a boil. Cover and reduce heat to simmer. Cook rice 20-25 minutes. (do not remove lid or stir while simmering or your rice will get gummy).
