Introduction
I make a big batch and freeze them into 2-cup pyrex dishes. Each pyrex works for about 3 servings (for me). I simply take a new frozen one out as a get down to my last current serving. This way I always have a healthy option for lunch that isn't always fiber twigs with almond milk. I make a big batch and freeze them into 2-cup pyrex dishes. Ingredients
-
Water, tap, 4 cups
Steel Cut Oats, dry, 1 cup
Unsweetened Applesauce, 10 oz (or two snack containers)
Fresh Ginger Root, 1" piece, finely diced
Cinnamon, ground, 1 tbsp
Splenda Packet (1 serving = 1 packet), 4 serving
pinch of salt
Tips
Usually, I reheat in the microwave for 1 minute and then whip in 1/2 cup nonfat yogurt, reheat for another 30 seconds, whipping again when it comes out. It becomes incredibly light and airy and I am also able to incorporate half a "milk" serving for breakfast.
Directions
Bring 4 cups of water to boil in a pan with a lid. Stir in 1 cup Steel Cut Oats. reduce heat to low, cover and simmer for 20-30 more minutes. When as chewy as you want it add fresh, diced ginger, and sprinkle in that splenda, salt, and cinnamon.
