Ingredients

    1 whole egg
    1 egg white
    1 tsp sun dried tomatoes and red peppers, chopped and rehydrated
    1 slice hormel natural choice smoked deli ham, diced
    1 slice sergento ultra thin provolone, diced
    1 slice of avocado diced (about 1/12 of an avocado)
    1 slice gwaltney center cut bacon
    sriracha hot sauce to taste
    salt & pepper to taste

Tips

rehydrate sundried tomatoes and peppers by placing in a shallow bowl with water to cover. microwave 45 to 60 secs, then let stand briefly. drain water off.


Directions

cook bacon in nonstick skillet. when done, remove and drain on paper towel. crumble when cool. discard all but 1 tsp bacon drippings from pan.

whisk eggs, hot sauce, salt & pepper together. stir in rehydrated tomatoes and peppers.

over medium heat, pour egg mixture into hot bacon drippings. when starting to set sprinkle in ham, cheese, avocado, and bacon. flip. cook briefly on second side and serve hot.
