Introduction
I can not eat anything in the nightshade family (tomato, peppers including cayanne, chili, and paperika which are always found in BBQ sauce) so a creative friend helped me make BBQ sauce without those. Ingredients
-
4 lbs fresh apricots (this was the weight at the store)
1 cup molasses
2 1/2 cups brown sugar
2 1/2 cup balsamic vinegar
1 cup white vinegar
4 tablespoons butter
Splash of whiskey
1 plus teaspoons garlic powder
1 plus teaspoons onion powder
1 teaspoon salt
1 teaspoon celery salt
1/2 teaspoon cinnamon
1 plus teaspoon fresh ground pepper
Tips
This makes a big batch, but keeps well in the fridge. I think it should freeze well, but have not yet tried it.
Directions
Wash and remove the seeds of the apricots, put them in blender and puree (makes about 8 cups of puree).
Combine with other ingredients in saucepan and simmer for an hour until it has reduced.
Season to taste with more garlic, onion and ground pepper.
Serving Size: makes about 6 cups
