Introduction

A yummy pasta salad that is a complete meal in itself! A yummy pasta salad that is a complete meal in itself!
Number of Servings: 8

Ingredients

    For the salad:
    -10 oz whole grain pasta (Penne or bow tie works best)
    -1.5 cups of cherry tomatoes, halved
    -2 bell peppers (any color), chopped
    -1 large red onion, chopped
    -1 cucumber (with or without peal), chopped
    -2 cups chopped carrot
    -1 cup chopped celery
    -2 plain chicken breasts, baked or grilled

    For the dressing:
    -1/2 cup plain greek yogurt
    -1/4 cup fresh dill (or to taste)
    -juice of half a lemon
    -salt and pepper to taste

Tips

This can be served immediately, but is better if allowed to sit for at least an hour to let the flavors come together. If desired, a good cheese to add would be feta. Olives are also tasty to place in.


Directions

-Cook pasta as instructed on box
-Dice up cooked chicken
-combine all ingredients
