    2 cups brown rice
    1 pound ground chicken
    1 cup black bean and corn salsa
    1/3 cup cheese or sour cream
    1 cup corn
    1-2 table spoons fajita seasoning mixed with about 1/4 cup of water

    you may add additional beans, however those are not figured into the nutritional info at this time


1. cook rice according to directions on box
2. brown ground chicken, and drain
3. pour fajita seasoning mix over meat and cook for a few minutes until liquid is absorbed
4. mix in salsa and corn (and beans if adding)
5. mix in cooked rice
6. add cheese or sour cream

when serving you may add a sprinkle of cheese or a dollop of sour cream, however this is also not figured into the nutritional information as we thought it was creamy enough and didn't add any more to our plates.
