1 Box Angel Food Cake Mix
3 Medium Overripe Bananas - About 4.5 oz each
1/2 tsp Cinnamon
1/2 tsp Nutmeg
Frosting
1/2 C Smart Balance Creamy Natural Peanut Butter
1/4 C (1/2 Stick) Unsalted Butter (Room temperature)
1/3 C Confectioners Sugar
1 tsp Vanilla Extract
1 tbsp Milk or as needed
Tips
Using overripe bananas brings out the most flavor.
Directions
Preheat oven to 350 degrees
Fill tins with cupcake liners. In a large bowl, mash bananas. Add dry ingredients and blend with a mixer on medium speed until you see stiff peeks. With an ice cream scoop, fill cupcake tins. Bake 15-18 minutes or until golden brown. Alternate halfway through for even baking. Let stand for 10 minutes. Finish cooling on rack.
Frosting
In a medium bowl, mix butter and peanut butter on medium speed just until creamy; Don't over blend. Add vanilla. Change mixer to low speed and begin adding confectioners sugar. If mixture is too thick, add about 1 tbsp milk, or just as needed.
