Introduction

This is a set it and forget it banana bread recipe. If you crock has a programmable timer you could make it before bed and wake up to the sweet banana bread aroma. MMMMM good. Ingredients

    2 Large Eggs ( can use egg substitute as well)
    1/2 c butter (unsalted)
    2 c flour
    1tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt (omit or salt substitute if desired)
    3 Medium bananas mashed

    Addition ingredients if desired:
    1 c chocolate chips
    1 c chopped walnuts

Tips

Don't use a baking bag. This recipe could be converted to a low sodium recipe pretty easily. Be sure to look for low sodium baking powder and omit added salt and use unsalted butter.


Directions

In a bowl, combine softened or melted butter, eggs and sugar. Mix well. Add in baking powder, baking soda, salt and 1 cup of flour. Mix well. Add last cup of flour. Mixture will be thick. Mash Bananas well and then add to mixture. If you choose to add in the extra ingredients, do so now. Butter a 6 quart crock dish and pour mixture in. Cook in crock pot for 4 hours on low. Top should be slightly brown. Bread is ready when it bounces back to the touch.
