Introduction

Ingredients

    4 C beef stock or water
    2.5 lbs ground beef, browned
    5 C chopped carrots
    3 C chopped celery
    3 C chopped potatoes
    6 cloves garlic
    2 Tbsp onion powder
    3 Tbsp basil
    1 Tbsp oregano
    1/2 C cornstarch, more or less

Directions

Makes 12 servings, more or less

Combine all ingredients in a slow cooker or big pot, except for the cornstarch. If in a slow cooker, cook for 4-5 hours on low. If in a pot, you can get by with 1-2 hours. With about 30 minutes to go until dinner, take out about a cup or so of cooking liquid and whisk the cornstarch in to it. Stir the cornstarch/liquid back into the dish and let it simmer and thicken up. You can also omit this step if you like the stewp at the undoctored consistency. You can sub or add in turnips, parsnips, green onions, leeks, green peppers, red or yellow peppers, mushrooms, green beans, broccoli - you get the picture. You can also sub red wine for some of the stock/water. I don't add salt while cooking and let everyone salt the dish after they're served. The addition of rice or pasta or noodles is good, too - especially if this is the second time around.
