Introduction

Ingredients

    one large marrow
    3large onions
    1kg of bacon ends
    2 large tins of chopped tomatoes
    1 vegetable stock pot "optional"
    water if needed optional

Tips

this is a simple recipe and can be altered to suit your own taste buds the quantities can also be altered to suit the size of the marrow being used and you can play around with it to suit your families need and taste


Directions

skin, deseed and chop the marrow small to medium pieces
peel and chop the onions or thin slices
chop the bacon ends
put into a large pan
pour over the tinned tomatoes
bring to the boil ,then simmer until bacon and marrow cooked through, at this stage you can add water if too dry but not too much to alter the taste
if the bacon does not have enough flavour you can add a stock cube and season to taste.

for a vegetarian option just omit the bacon and add the stock cube for extra flavour.

Serving Size: makes 6 to 8 portions or more depending on size
