Introduction

This is a low calorie, easy crock pot recipe, that tastes fantastic. This is a low calorie, easy crock pot recipe, that tastes fantastic.
Number of Servings: 8

Ingredients

    3 frozen skinless chicken breasts
    1 can Rotel tomatoes (whatever heat level you want)
    2 pkgs dry Taco seasoning mix
    1 can light red kidney beans or black beans, drained
    1/4 cup olive oil
    1/4 cup water

Directions

Pour taco seasoning into the bottom of crock pot.
Place frozen chicken breasts right on top of taco seasoning.
Add Rotel tomatoes on top of that.
Pour olive oil over the top and add 1/4 cup water.
Place drained beans on top and cover with lid.
Let cook for 4.5 hours on low.
Removed chicken breasts and shred.
Place chicken back in crock pot and cook an additional 1/2 hour.
Mix it together and serve as is, on tortillas, chips, or whatever and however you choose.
