    20oz. Fresh Alaskan Halibut
    Juice from 6-7 Limes
    2 Garlic Cloves, pressed
    1 Jalapeņo, chopped
    2T. Shallot, chopped
    1/4C. Onion, chopped
    3T. Cilantro, chopped fine
    2T. Lemon, fresh squeezed
    2T. Extra Virgin Olive Oil
    1C. Cherry Tomato, chopped
    1 Avocado, diced into bite-size chunks
    Butter Lettuce or Romaine Lettuce Leaf Cups
    10 Garden of Eatin SALT FREE Blue Corn Tortilla Chips (optional, additional calories)


Optional: 10 SALT FREE BLUE CORN Garden of Eatin tortilla chips, additional calories.


Be sure to use FRESH halibut, cut into half-inch chunks.
Add the lime juice. Cover and refrigerate for two hours.
Drain lime juice.
Mix olive oil, lemon juice, pressed garlic.
Add the chopped jalapeņo, chopped shallot and onion to the halibut,toss.
Add the olive oil,lemon garlic mixture, toss.
Refrigerate until ready to serve.
Add the fresh cilantro, tomato and avocado just prior to serving.
Divide amongst the lettuce leaves, serve two leafs per person.
