Ingredients

    1 cup chopped (cooked or raw) chicken breast
    2 cups chicken broth (or water, or homemade stock)
    1.5 cups white corn, frozen (or 1 can, drained)
    2 cans Great Northern Beans, drained
    1/2 cup Light Sour Cream
    1 medium onion, chopped
    1 can (4 oz) green chiles, chopped
    3-4 garlic cloves, minced
    1 can (14 oz) diced tomatoes, drained
    1/2 tsp garlic powder
    1 1/2 tsp cumin
    1/2 tsp Italian seasoning (or mixture of italian herbs: basil, parsley, and oregano)
    salt and pepper, to taste
    Low Fat Mozzarella cheese for topping (optional, and not included in final nutrition information)

Directions

Pour all ingredients in the crockpot in the morning and let simmer all day on low (8-9 hours), or by noon for a faster cook on high (4-6 hours).
