Ingredients

Flour, white, .5 cup
Egg, fresh, whole, raw, 1 large
Milk, 2% 1 cup
Salt, 1 dash
Sunflower Oil, 1 tbsp
Apples, fresh, 2 medium peeled and chopped
Blueberries, fresh, 1 cup
Cinnamon, ground, 1 tsp
Butter, salted, 1 tbsp
Tips
A little natural yogurt makes the filling nice and creamy too.
Directions
Blend first 5 ingredients and allow to sit while you prepare the apples.
Add butter to saute pan and when it starts to sizzle add the apples. Reduce heat to low and stew gently until apple softens a little. Add cinnamon and blueberries, cook for 2 minutes then turn off heat and leave covered on stove.
Use a non-stick pan and spray butter/oil to gently fry the crepes on both sides one at a time, keeping them warm in a low oven.
Assemble crepes by putting a spoonful of mixture onto each and rolling them up.
Serving Size: Makes 8 small crepes
