Introduction

A great way to use that roast chicken carcass! A great way to use that roast chicken carcass!
Number of Servings: 4

Ingredients

    1 onion, sliced
    3 carrots, sliced
    3 celery stalks, sliced
    1 turnip, chopped

    6 cups chicken stock - it's okay to use prepared stock, but I use this as an opportunity to use the carcass left over from my herb roasted chicken, which is also where the yield of one cup of shredded chicken comes from

    1 cup cubed or shredded cooked chicken
    1tsp salt
    1tsp pepper
    2 TBSP Fat free Half and Half

Directions

In a sauce pan using lite cooking spray, brown veggies. Add chicken stock and cooked chicken, cover and simmer one hour. Puree in food processor or blender, return to pot. Season with salt and pepper. If you use prepared stock you might wish to add sage, thyme and rosemary. Stir in Half and Half. Serve with hot crusty bread and a crisp salad!
