Introduction

A warm and zesty stew, perfect for a cold day. A warm and zesty stew, perfect for a cold day.
Number of Servings: 1

Ingredients

    2 cups chicken broth
    1 can ro-tel (diced tomatoes with green chiles)
    2 tsp. sugar
    1 1/2 tsp. salt
    1 1/4 pounds boneless,skinless chicken breast
    1 1/2 cups sliced carrots
    4 cups diced potatoes
    1 1/2 cups sliced celery
    1 large onion, chopped
    2 T. corn starch

Directions

Combine the first five ingredients in the crockpot. Stir in chicken and vegetables and cook on low all day, until meat and vegetables are tender. IF you want it thick like a traditional stew, mix the corn starch with an equal amount of water and stir into the stew about 30 minutes before serving and turn up to high.
