    1 cup almonds blanched and ground with 27 extras for topping cookies, halve each almond after blanching
    1 1/4 cups rice flour
    2/3 cups of sugar
    1 teaspoon of baking powder
    1/4 teaspoon salt
    2 large eggs
    1/4 cup oil (veg. or canola oil)
    1 egg yolk mixed with 1/2 teaspoon water


Be patient when mixing the dough it might need time to come together.


Grind the blanched almonds into flour in a food processor. Mix in a large bowl almond flour, rice flour, sugar, salt and baking powder. Add eggs and oil mixing well.
Shape dough into 1 teaspoon size balls, placing on parchment paper covered cookie sheet. Place a halved almond on each and press down well. Brush egg wash on to each cookie. Bake at 350 degrees F. for 15 to 20 minutes. Cool on a wire rack, then store in an air tight container.
