Introduction

Moist and flavorful enough that the typical topping of cream cheese frosting is not needed or missed.

Number of Servings: 11

Ingredients

    Dry ingredients:
    1 C flour
    1 C sugar
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt

    Wet ingredients:
    2 eggs
    1/2 C crushed pineapple (in natural juices), drained
    1/2 C carrots, grated
    1/2 C raisins
    !/2 C pecans, chopped

Tips

As no oil is used in this recipe I found (by the hard way) that these will stick to cupcake liners.


Directions

Preheat oven to 350*.
Lightly spray cupcake pan with a non-stick baking spray.
Mix all dry ingredients.
Add wet ingredients and mix completely.
Portion out batter into 11 reservoirs.
Bake approx 12 mins, until toothpick comes out clean.
Let cool and enjoy.



Serving Size: makes 11 standard size muffins
