Spicy chili with lean beef, red beans, and lots of veggies. Spicy chili with lean beef, red beans, and lots of veggies.
Number of Servings: 8


    2.5 cups small red beans, dry
    1 lb lean ground beef
    2 large hatch chiles
    3 large cayenne peppers or jalapeno peppers
    1 large onion
    4 cloves garlic
    2 tsp salt
    2 tsp cumin
    4 cups corn
    12 oz tomato paste (8 tbsp)
    28 oz diced tomatoes (3.25 cups)
    2 tbsp extra virgin olive oil


Rinse beans, cover with 2 inches water, boil for 2 minutes. Remove from heat, let stand for 1 hour. Then bring to a boil and simmer for 1.5 hours.

Wash the produce. Chop the garlic and onion very finely. Chop Hatch chiles and slice cayenne/jalapeno peppers in thin slices. Remove seed or leave seeds for extra heat.

Stir tomato paste with equal amount of water. Stir in diced tomatoes.

Heat 2 tbsp olive oil in large skillet and brown ground beef.

Add tomato mix, onions, garlic, peppers, corn, cumin, and salt. Cover and simmer until beans are done.

Carefully mix beans and remaining chili.

Serving Size: Makes 8 servings.
