    1/4 cup black beans
    1/4 cup zucchini, diced
    pinch of salt
    pinch of pepper
    pinch of cumin
    2 8-inch flour tortillas
    1/4 cup marble jack cheese, shredded
    Cooking spray


Saute beans, zucchini, and spices in skillet coated with cooking spray until zucchini is tender. Remove from skillet and set aside. Give the skillet another mist of cooking spray. Place one tortilla in the skillet, put the beans, zucchini, and cheese on it, and top with the other tortilla. Spray the top tortilla with more cooking spray. Flip when bottom is golden brown and delicious and repeat on the other side.
