    3 cans chunk light tuna in water, Drained well
    2 large eggs beaten
    1/4 c whole wheat flour
    1/4 c corn meal
    1/4 c diced red onion
    1/4 c diced red bell pepper
    1/4 c finely diced zucchini
    kernals from 1 ear of corn
    1 garlic clove, finely grated or minced
    1 jalapeno pepper, seeded and finely minced
    1/4 c chopped cilantro
    1 tsp ground cumin
    1 tsp salt
    1/2 tsp black pepper


I served these with homemade peach salsa. yumm :)


mix all ingredients until well combined. Adjust moisture by adding flour or water as needed to make a cohesive mix.
Scoop out about 1/4 cup of mix and form into patties.
Cook in a pre-heated skillet sprayed with non stick spray over med-high heat until nicely browned on each side.
Finish in a 375 F oven for about 15 min.
