Ingredients

1 to 1.5 lbs round steak (or other cheap steak) cut very thinly across grain
1/4 to 1/3 cup soy sauce
1 Tbls sugar
1 tsp minced ginger
3 cloves garlic minced
2 green peppers cut into 1/2" pieces
2 red tomatoes cut into 1/2" pieces
1 Tbls corn starch stirred into 1 cup water
2 Tbls vegetable oil
Tips
Partially frozen steak makes it much easier to slice thinly.
Directions
Combine steak strips, soy sauce, and sugar to marinate 10 minutes or longer. Add a little water if needed.
Prepare ginger, garlic, peppers, and tomatoes
Heat 2 Tbls veg oil in large pan. Add 3 cloves garlic minced, and 1/4 to 1/2 tsp ginger (can easily be overpowering). Saute just until garlic is a bit soft (don't burn garlic!)
Add steak and stir fry until meat is no longer pink.
Add green peppers and cook just until heated through or to your liking
Add tomatoes and stir just long enough that they are warmed through
Stir in water with cornstarch
Serve over rice.
