    Mushrooms, fresh and dried, assorted, 10 medium
    King oyster mushroom, 1
    Cabbage, napa, 1 cup
    Carrots, raw, 1 small (5-1/2" long)
    Ginger Root, grated, 1 tbsp
    Kikkoman low sodium soy sauce, 1 tbsp
    *Sushi Chef Mirin, 1 tsp
    Corn Starch, 2 tsp
    Water, 1/2 cup
    Olive oil, 1 tsp


Soak the dried mushrooms and drain, reserving water. Slice everything. Stir-fry the mushrooms. Add cabbage and carrots and stir fry a bit more. Add ginger, soy and mirin and 1/4 cup mushroom water. Bring to a boil, reduce heat, cover and simmer until tender. Mix the cornstarch with 1/4 cup mushroom water and add to the vegetables. heat until it thickens.
